Proceedings from a symposium on food colorants (March, 1977) emphasize recent advances in food color technology, as well as nontechnical issues concerning the economics and regulation of colorants used by the food processing industry. Technical papers cover the anthocyanins, betalaines, carotenoids, and polymeric food dyes, and colorimetric techniques for color measurement. The present and future status of certified color additives, and the color needs of the food industry are discussed. Economic constraints on the use of naturally derived food colors are also considered. The concluding paper describes current regulations and the future position of the FDA regarding food colors
