Edible films are thin materials based on biopolymers from renewable sources, and plasticizers. Normally plasticizers are colorless low molecular components. The use of natural pigments may be valuable for the edible film technology. The choice of the pigment should consider not only the intended color, buy also the effect on the overall film properties. The pigment stability in the biopolymer matrix should be studied.
