|
Fusarium graminearum isa a common toxicogenic fungal species affecting barley in Uruguay, where temperature and humid weather conditions, with cold and hot daily cycles, are ideal for its growth. Fusarium invades grain commodities in the field and during storage and produces mycotoxins of which deoxynivalenol (DON) is the mos prevalent in Uruguayan creals. Uruguayan Barley is mostly exported, generally as malt. The stability of DON and the concentration levels at which it remains in the final barley malt pose a potential risk for brewing and animal feed industries.
