Fumonisins are a family of mycotoxins produced by Fusarium moniliforme, F. proliferatum and other related species that colonize maize worldwide. The toxine produced accumulate to levels known to be toxic to animals and potentially harmful to humans. The data obtained confirmed the natural ocurrence of fumonisins in maize products in Uruguay.
