This volume has been prepared by the APHA Intersociety/Agency Committee on Methods for the Microbiological Examination of Foods and brings together analytical procedures for the testing of foods, A large number of scientists with established competence in the different subject areas have contributed to this compendium. Some of the methods included differ only in format from those given in the Official methods of analysis (12th ed., 1975. ASS. Official Analytical Chemists, Washington) and in APHA Standard methods for the examination of dairy products (13th ed., 1972). These methods are used by various U.S. regulatory agencies as official methods of analysis. Other methods selected have been used in the monitoring of foods for pathogens or for food spoilage types of microorganisms.
